Sorry I have been out of the loop for a while but we have been really busy and Katelynn came down with a stomach bug so my time has been used up by sanitizing the house. Two weeks ago we went to David and Ashley's house (Jake's younger brother) and enjoyed the Superbowl with them and Weldon, Leah and Ellen. We decided to take a dessert and this cobbler came to mind because it is sooooo easy. Try it I promise it only takes like ten minutes to prepare and then only about 30 to cook!
Ingredients:
1 stick margarine
fruit (fresh, frozen or canned)
sugar to sweeten fruit
1 cup sugar
1 cup flour
4 teaspoons baking powder
1/2 teaspoon salt
1 cup milk
Melt margarine in a baking pan (about 8x10 or larger) in a 375 degree oven. Sprinkle 1/4 to 1/2 cup sugar over fresh or frozen fruit. (This step is not necessary with canned fruit) Mix dry ingredients in a separate bowl. Gradually stir in milk to make a batter. Pour fruit over melted margarine and pour batter over fruit. Bake in the 375 degree oven for 30-40 minutes or until golden brown.
You may use any fruit. We like frozen blackberries or fresh (peeled) peaches. We also like to top it with vanilla ice cream.
